Born in Wilmington and raised in the pluff mud and river swamps of the Carolinas, James has a passion for cooking what he has caught or harvested in the woods or on the water. The chef and owner of Hook & Larder and Postal Fish Company was previously the executive chef at The Carolina Inn.

The New England Culinary Institute grad is an alumnus of renowned restaurants from New Orleans to the Midwest. His style is inspired by local, Southern influences with traditional cooking techniques. James was a founding board member for the Council for Sustainable Fishing.
