As the pastry chef for the bu.ku restaurant group, Brittany is the talent behind the wildly playful and deliciously provocative desserts at bu.ku in downtown Raleigh, bu.ku in Wake Forest and so.ca in Cameron Village. As the News & Observer’s Greg Cox explained in his four-star review of so.ca, “Wherever your meal’s itinerary takes you, it absolutely must end with dessert. Pastry chef Brittany Grantham… bewitches the eye as well as the sweet tooth…”
Brittany’s passion for sweets started early. Her siblings served as willing recipe testers for her earliest creations when she was small. As a young adult at The Chef’s Academy, her ambition in the pastry arts blossomed, and during this time, she explored her love of baking professionally at Edible Arts. After graduating, Brittany earned an externship on award-winning Chef Steven Greene’s team at AN, and after just three months, was invited to join AN’s executive pastry team, where she refined her skills and techniques. In 2017, bu.ku’s Sean Degnan and Tony Hopkins offered Brittany her first role as executive pastry chef, responsible for developing her own menu for bu.ku in downtown Raleigh. Today, she is responsible for the regularly changing dessert menus at three restaurants, celebrating the global flavors and vivid palates of Asia and Latin America. At just 24, Brittany’s talent and ambition shine in her inspired dessert offerings, like guava tarts with pineapple sorbet and almond-corn cake with lavender-honey ice cream and sake glazed peaches.
