Hailing from Long Island, Adam started out as a restaurant manager in Brooklyn. He had a variety of jobs in the culinary industry before working at Jack the Horse Tavern in Brooklyn. After he moved to North Carolina, Adam was the lead chef at Elaine’s on Franklin in Chapel Hill before becoming the executive chef at Il Palio from 2007 to 2013. Feeling the need to venture out on his own, Adam left Il Palio to become the executive chef and partner of the award-winning Black House at Straw Valley Food & Drink in Durham. He was there from 2013 to 2015. Adam is now back at home at Il Palio and The Siena Hotel, serving as executive chef.
